3 Easy Recipes To Try At Home While In Isolation

With ‘Rona still rearing its ugly head, it looks like WFH and #StayAtHome are here to stay. It’s not all bad news, though. Staying at home means you can finally accomplish those hobbies and plans you had been putting off due to your busy work schedule. For the culinary-challenged (we all started somewhere) this is the perfect time to perfect some basic recipes to wow your guests when we’re finally allowed dinners parties again. 

These 3 easy recipes to try at home while in isolation are perfect for beginners, and require little to no prep! 

 

Easy Mince Pasta

Any easy recipe always starts with pasta! Probably one of the most versatile foods and so easy to cook (not to mention the price!). The Easy Mince Pasta recipe is the perfect start for those who love to cook with a glass of wine in one hand and taste testing with the other. 

Cooking time is 30 mins and that’s mostly taken up by roasting the tomatoes in the oven. Once they’re roasted, blend them up to make the sauce and start frying the garlic and veggies, add the ground beef and stir in the tomato sauce. Once everything is cooked, add your cooked pasta and voila! You’ve got a decedent easy mince pasta to enjoy cuddled up with your favourite film! 

All you need for this easy recipe is: 

  • Baby Roma Tomatoes (3 Cups) 
  • Olive Oil (3 tablespoons) 
  • Garlic (3 Cloves) 
  • Sliced Mushrooms (8 Ounces) 
  • Ground Beef (3/4 lb) 
  • Chopped Onion (1/2 cup) 
  • Tomato Paste (2 tbsp) 
  • Mascarpone (1/2 cup) 
  • Pasta (8 Ounces) 
  • Fresh chopped basil and grated parmesan to taste 

 

Easy Chilli Con Carne 

Chilli is one of those dishes that can be easily added to your cooking repertoire. In just one pot, and added as many or as little ingredients as you like, you can cook up a spicy storm with enough left over for a grab and go lunch the next day. 

Prep time can range anywhere from 20-30 minutes and you want to give you chilli enough time on the stove to let the flavours seep in. Fry the vegetables and the beef in a large frying pan and fry until brown. Then add the spices and tomato puree and mix until all combined. Cook for a few minutes to let the flavour seep in. Add the tinned tomatoes and kidney beans (you can put in your stock cube and Worcestershire sauce here). Let it simmer up to an hour to get those flavours out and serve with rice. 

All you need for this easy recipe is: 

  • Chopped onion (1) 
  • Chopped mixed peppers (2) 
  • Beef Mince (550g) 
  • Hot Chilli Powder (1 tsp) 
  • Ground Cumin (1tsp) 
  • Smoked paprika (1/2 tsp) 
  • Tomato Puree (1 tsp) 
  • Chopped Tomatoes (1 tin) 
  • Kidney Beans (1 tin, drained) 
  • Beef stock cube (1) 
  • Worcestershire sauce (to taste)

Easy Chilli Con Carne

 

Easy Spicy Stuffed Chicken (Wrapped In Bacon!) 

Probably the most simple, but effective dish out there. Who doesn’t love jalapeño poppers? And, paired with chicken AND bacon, you’ve got yourself a simple dish everyone will be asking the recipe for. The only trick you need to learn is how to pound out the chicken to get that perfect consistency to wrap around the jalapeños – but practice makes perfect! 

Pound the chicken breasts until they are thin enough and then place some cream cheese right in the middle. Add your jalapeño (take out the seeds if you prefer mild heat) and cheddar cheese and wrap the chicken around it (like a chicken breast burrito!). Then wrap your bacon around the chicken and place in the oven for 45 minutes, or longer depending on how crispy you like bacon.

  • Skinless Chicken Breast (boneless, 4 pieces) 
  • Cream Cheese (4 Ounces) 
  • Jalapeños (4) 
  • Shredded Cheddar Cheese (1/2 Cup) 
  • Bacon (8 Slices)
